I couldn't recall when was my last bake of Hokkaido cupcakes. It was so popular few years ago. Recently another cake from Taiwan so called Taiwanese old fashioned cheesy sponge cake台湾古早味芝士蛋糕  also very popular until i also joined the long Q to buy one to try it. After tasted it, i would said this cake is not deserve for the long Q. No doubt it has nice egg aroma but the taste was quite plain, and it was deflate more than half the original height after few hrs. Anyway, i got the idea of how they adding cheese into the cake and turned this idea into this Cheesy Hokkaido cupcakes.

I supposed to make 60 cupcakes for my niece’s Birthday on last week. I planned to bake chocolate buttermilk cupcakes topped with chocolate Swissmeringue buttercream. But the end, I have to cancel this plan due to the bad haze situation (not sure when the school will be closed). Mini muffin pancake 迷你玛芬松饼

My daughter's best friend came over to stay with us for couple of days. And since my kids are also not yet start schooling, So I was thinking to make some pancake for them as breakfast. While i was preparing, suddenly i changed my mind instead of pan fry them but bake them like muffin. I also tried to googled and found there are many recipes making the same way. So i have confident it will work well. And this method is so easy and quick, rather to pan fry them.

Back to this post, I bought a 500g of cream cheese the other day due to better price if buy more. After use half to make a Japanese cotton cheesecake for my mother's Birthday. I have to search for a nice recipe to use the leftover, and found this old recipe.

I have many cupcake liners haven't used. I bought some and some given by my cooking & baking buddies.  I took out this floral design and I decided to bake them with banana sponge cake, they look so lovely! And this was a faster way to prepare cupcakes, I still use my prefer cold eggs method, don't need egg separation, and only need 5mins beating time, quick and good!

We just went to Macau for few days short visit. It was a last minutes plan, booked quite a low air fares but later only realized that the hotel rate there was quite high. Anyway, we were enjoyed many nice foods there but also tasted some foods that we don't like. This time, I have a chance to try this famous cake in Hong Kong and Macau, paper wrapped cake or cupcake 紙包蛋糕. The first one I tried actually not as nice as expected. Anyway, I found a good one at an old Char Chan Teng (local coffee shop) which they bake freshly paper wrapped cupcakes daily. Their cake was light, fluffy and full of egg aroma.
