Raisin Scones 葡萄乾司康餅

When i first tasted this raisin scones given by my friend, i was so impressed and i would said this is the best scone that i have ever had. Buttery, crisp on outside, soft and fluffy inside, less sweet, so good. Thanks to my friend Jennifer so kind to share with me this wonderful scone recipe !

From stone to scone....

I was so frustrated when I baked this basic scone for the first time, I was totally forgot to add in baking powder, so it turned out like "stone". As usual, I never give up, after consumed the "stone" , I tried again, and this time the first thing I make sure is mix the baking powder with the flour first .^^





I was adapted the recipe from Happy Home Baking, you must visit her blog, she has a wonderful blog with all wonderful recipes..Thanks to HHB..
Do check out her detail recipe for this basic scone, and I would like to summarize it in a simple way:-
Simple recipe:-
Cake flour 125g
Baking powder 1/2tsp (make sure you remember to add this !!!)
a pinch of salt
Unsalted butter 25g
Caster sugar 20g
1/2 egg + milk = 70ml liquid
Steps:-
1. Mix flour, baking powder, sugar and salt in a mixing bowl.
2. Rub cold butter in the dry ingredients until the mixture resembles coarse crumbs, keep in the fridge for 30mins.
3. Add in the liquid until just combined (don't overwork). The mixture will be sticky, moist and lumpy. Store in the fridge for another 30mins.
4. Cut the dough and place on baking sheet.Brush the tops with some milk.
5. Bake at pre-heat oven 200c for 15mins.
p/s My kids doesn't like much on Scone, I think I have slim chances to bake this again..

English Cheese Scone

This was my 1st time baking scone, my sister-in-law (Annie) was so kind sharing this lovely recipe to me, the result was great. This is best to accompany with a cup of English tea.












Recipe:-

320g Self Raising Flour
1 tsp baking powder
90g cheddar cheese
90g butter
2 eggs (beaten lightly)
70ml milk

1. In the electric mixer, sift in the flour and baking powder, add in butter and cheese, mix well.

2. Add in beaten egg, then gradually add in milk, mix to a soft but not-too-sticky dough.

3. Use a pastry cutter to cut it round and place them apart on a baking tray.

4. Brush the top with some cheese.

5. Bake in preheat oven for 200c for 20mins.
Note from Annie: advise you to use machine or electric mixer to prepare the dough, if use hand, the heat from our hand will transfer to the dough which will harden the dough. For those unfinished scones, store in container and put into fridge, reheat when you want to eat and it still taste good.
Anyway, I need to try out with sweet scone, kids prefer sweet taste.
