Fresh borlotti beans cooked in a skillet with red onion

I love shelling fresh beans from the garden, especially borlotti, as they are so pretty! I usually put fresh beans in soups, or boil them to make a salad (and keep the water for a soup). To cook them slowly in a frying pan takes a bit longer, but they are delicious! Chop a small red onion and sauté with a little olive oil for a few minutes, then add the borlotti. Stir and add a little water and salt, cover and check form time to time, stirring well and adding more water when needed. It takes about a hour (or more if you simmer on low), so be patient. No need to add tomato paste as the onion will almost melt and make a nice colored sauce. Taste for salt at the end and adjust with black pepper, if you like. 1000 times better than baked beans!   Photos and recipes by Alessandra Zecchini  ©

Red onion, thyme and parmesan crust soup

This is real ' cucina povera ', a simple dish made with humble ingredients and leftovers. Chop two red onions and sauté with a couple of tbsp of olive oil and some fresh thyme. Add 1 litre of vegetable stock and one or two crusts of parmesan cheese. Simmer until the onions and the parmesan crusts are soft. At this point you can either remove the parmesan crusts and cut off the softest parts (to put back into the soup), or keep simmering the lot until the crusts are really really soft (you will need to add another half a litre of water). I usually use only the softest part and then cut the rest of the crust (which is a bit chewy) for the cats. Roast potatoes with red onion and thyme

Busy month this one! I wonder if I will manage to post every day like I did last December! Anyway, I have a lot of Xmas decoration ideas to publish and recipes too, this is a good one for the roast potato side dish (to accompany a Xmas roast, nut or other!).  Cut the potatoes in small cubes. Chop one or two red onions, and some good olive oil and mix. Place on an oven try lined with baking paper and sprinkle with salt. Bake on high for about 30-40 minutes, shaking the potatoes from time to time (I do this by lifting the baking paper). When the potatoes are ready add a few thyme sprigs and mix well (I like to add the thyme at the end, it will smell lovely!).
